Thai Chicken Stir Fry with Canadian Recipes of the Great White North

Ingredients:

2 small Szentensi's
2 Large Red Sweet Pepper by http://www.windsetfarms.com/
Five large fresh mushrooms - sliced
1/2 small sweet white onion - julienne cut
2 - 4 oz Chicken Breasts - medium cut ( cube)
1/2 Cayenne Chile Peppers
1 tablespoon of Olive Oil
2 peices of green onions - rough cut
1/4 teaspoon fresh minced garlic
1/4 teaspoon of fresh minced ginger
1/2 cup - Chef Bari's Thai sauce


Prep: Cut Chicken and mix with fresh minced garlic, finely chopped 1/2 cayenne pepper and 1 tablesppon of olive oil - add seasonings of salt and fresh ground black pepper.Cover and place in fridge for a couple of hours.

Method:
1.Heat up deep saute pan with rest of olive oil and add fresh mushrooms. Saute the mushrooms and add chicken marinade in three parts. ( Hint : if you add the chicken all at once, your saute pan will quickly cool off) Cook at medium heat until cooked.

2.Remove chicken & mushrooms from saute pan and set to the side.

3.Re-heat saute pan and add sweet white onions and peppers. Saute for a few minutes.

4.Add chicken mixture back into saute pan. Let cook for up to five minutes

5.Add fresh rough cut green onions

6. Add 1/2 cup of Thai - ( Hint: heat up Thai sauce separately in the microwave and then add to stir fry dish)

Serve immediately with Basmatic Rice
